I'm trying to make some bonsai from Crataegus monogyna also. It's a common hedge plant here in the west of Ireland, and also occurs as a single windswept or rounded specimen in fields (known then as a fairy bush). As a fairy bush it often has exposed roots due to cattle sheltering under them. I find it very inclined to shoot strongly and make straight strong shoots which are brittle and difficult for me to shape/wire. But it's clear you've tied down the shoots to make them horizontal... I can learn so much by simply looking at your pictures.. MISE LE MEAS.
